Mexican coffees have long been a firm favourite here at Rinaldo’s and that’s no different when it comes to this fabulous new organic offering from Lino Garcia's farm in Santa Maria Ozolotepec.
Lino and his family are small-scale farmers that grow coffee on their farm named 'El Pocito', after a 5-day hurricane that hit the farm over 50 years ago.
Sadly, Lino has recently passed away so the management of the farm has passed onto his wife and children who will continue their relationship with our importing partner, Caravela. Lino moved into speciality coffee to access better prices for his higher quality coffees and never looked back, due to the more sustainable business model and greater appreciation of his delicious coffees.
Once ripe, Lino's family pick the coffee cherries and remove their pulp on the same day. The pulped cherries are then fully washed and are left to ferment for 30 hours, removing leftover mucilage.
The beans are left to dry on palm mats and concrete patios until they reach a suitable moisture content.
Lino and his family use native shade trees to emulate natural ecological relationships in which the large canopy of shade trees provides protection for the coffee plants. This not only improves the quality of the beans by slowing down the maturation of the coffee plants but also increases the biodiversity of the farm.
The fully washed processing of this coffee allows for clean notes of chocolate, toffee and peach with a green apple acidity - perfectly punchy for espresso-based drinks whilst providing the complexity required for pour-over.
