A great example of the classic, clean profile we've come to expect from El Salvador, this washed lot from El Molinito is sweet, nutty and easy to drink, reminding us of honey, almonds and grapes.
The name is derived from El Molino, the farm that produces this lot.
Owned by the Salaverria family, who have been producing coffee in the area for over 100 years, the farm is located in the volcanic region of Apaneca-Ilamatepec.
Farming
Coffee production is overseen by farm manager Tomas Mendoza, who has worked for the family business, JASAL, S.A de C.V, for more than a decade.
The coffees used to be processed on farm but freshly picked cherries are now transported to the family's processing station Beneficio Las Cruces, where they are carefully washed, dried and bagged for export.
El Salvador's Coffee History
Coffee was initially brought to El Salvador from the Caribbean as a garden crop in the 18th century. Coffee did not start being exported until 1856 due to the production of the indigo plant, which was much easier to cultivate and was more profitable. Once the development of synthetic indigo began, the government soon began to encourage the growth of coffee, leading to its exponential growth. El Salvador now focusses on the growth of mostly premium coffee.
