Sourced from Tabaconas in the beautiful San Ignacio region of Cajamarca, this coffee showcases the best of South American profiles with vibrant notes of orange, cashews, and a touch of treacle sweetness.
The washing process of this coffee produces a clean and bright flavour profile, that is beautifully balanced and smooth - it’s a delight!
The Producers
The farmers in Tabaconas, nestled at an altitude of 1,600 meters above sea level, are dedicated members of the Asociación de Cafetaleros La Gran Reserva, who are renowned for their consistent production of exceptional coffee.
The farmers handpick ripe cherries, which are then meticulously processed. Initially the cherries are dry fermented for 16 hours, followed by washing to remove mucilage. The beans are then left to dry for 15 hours, until they reach the optimal moisture content.
The careful processing of these beans certainly shines through in the resulting cup that's clean, bright, and full of the rich flavours of the region.
