Finca Casa De Piedre is one of 2 farms operated by the family run business Cafe Directo. The father and daughter duo, Gerardo and Jennifer Arias, run Directo and have over 3 decades of experience in the cultivation and processing of speciality coffee in Costa Rican microlots, we think their expertise is evident in the resulting cup.

Finca Casa De Piedre exhibits a unique microclimate and soil type that can sustain a range of varieties such as Catuai, Pacamara, Gesha and this tasty Venecia.

We've been enjoying this washed lot as an espresso that has a rich chocolatey body but an apple-like brightness, overall it is well-rounded, sweet and delicious!

Processing

The cherries are hand-picked at their optimum ripeness and are graded through floatation. The less dense, lower quality cherries rise to the top and are removed, leaving the denser, higher quality cherries for washing.

The pulp is removed from around the bean before they are left to ferment, this process adds complexity to the cup profile of the bean. The beans are then left to dry on raised beds for 8 days to reduce their moisture content to the optimal level. They are then hulled and are graded prior to bagging and shipping to us for roasting!
