The farmers strive to produce premium coffees and are always looking for ways to improve their farming. In so, the coffee becomes higher quality and they improve the quality of life for themselves and their families. At Rinaldo's, we are proud to be working with farmers who are so dedicated to their craft, an ideal we strongly resonate with.
This coffee gets its name from an old indigenous reservation between the Inza and Paez municipalities, in which the cherries are grown. The Cauca region is traversed on the East by the central mountain range. The mountainous climate brings high altitudes, lending itself to the high quality of this delicious Colombian. The area has a rich cultural heritage and is still home to remnants of indigenous cultures and reservations, making it a world heritage site.
The coffee cherries are picked at their optimum ripeness and the mucilage is removed. They are then sun and air-dried on parabolic patios and raised beds to speed up drying. The farms use shade trees to emulate natural ecological relationships, in which the large canopy of shade trees provides protection for the coffee plants.
