    We're always delighted to have a new coffee from Colombia and this newly arrived MICROLOT, is a truly astounding.

    Juan Carlos Ruiz is the lead producer on this 5-hectare farm, working with meticulous attention to detail. The high quality control at his farm, "El Cedro", translates from the coffee roaster to the end product in your coffee cup. Juan fully washes this coffee lot coffee, followed by a 38-hour dry fermentation period, which presents a clean flavour profile. 

    Beautifully balanced, with caramel, chocolate and orange notes, this bean is a great all-rounder. Colombian coffee is typically a versatile full-bodied coffee  works perfectly in most brewing methods, yet still retains incredible florality.

    The Art of Production


    This lot was fully washed with a 38-hour dry fermentation after de-pulping. After washing the coffee is shade dried under a marquee for around 15 days, protecting the coffee from moisture and sun damage while achieving constant airflow and temperature to facilitate a stable drying process.


    The Region


    Alto del Obispo is a small town in the municipality of San Agustin, South Huila. Farmers in this region are typically very small scale but quality conscious, taking immense pride in their coffee. The broader Huila region is well known for its coffee quality, but also for being the first historical department in Colombia to begin coffee production. 

    Farmers in Huila are very quality-conscious. Their crops receive a lot of care and attention and they tend to be the most pioneering when it comes to embracing new processing and farming methods. The most relevant municipalities for coffee in Huila are: Pitalito, Garzón, Gigante, San Agustín, La Plata, Paicol, Acevedo, among others. Huila coffee represents 18% of Colombian production. It is always in high demand and is often preferred as a single origin offering for its balance of acidity and sweetness.

    The Huilan landscape is dominated by volcanos and mountains, providing a rich terroir of high altitude and fertile soils and offering a wide range of ecosystems where coffee can be grown. There are producing farms ranging from 1,500 MASL up to 2,300 MASL conferring great attributes to the cup profile such as bright acidity and characteristic sweet notes.
